Ingredient
- 1 lb. (450 g) smelts
- 1 cup (250 mL) milk
- Vegetable oil* for frying
- Sufficient quantity, flour*
- Salt to taste
- 1 bunch parsley
- 2 lemons, cut into wedges
Preparation
- In a deep fryer, heat oil to 375°F (190°C). Pat smelts dry; dip in milk then dredge in flour, shaking off excess flour. Drop smelts into deep fryer.
- Fry 5 - 7 minutes or until golden brown. Drain on paper towels. Salt. Transfer to a serving platter and garnish with lemon wedges and parsley.
