ingredient
- 2 lb. (900 g) 1-po. (2.5-cm) cubes of lamb
- 1/4 cup (60 mL) olive oil
- Ground pepper
- 1 1/2 cup (375 mL) pitted black olives, quartered
- 1 1/4 cup (310 mL) red wine
Preparation
- Preheat the oven to 350°F/180°C. In a roasting pan, combine lamb, oil, pepper, olives and half of the red wine.
- Cover and cook at 350°F/180°C about one hour or until meat is very tender. While cooking, baste often with the rest of the red wine. Serve hot.
