Spice crust rack of lamb

ingredient

  • 2 x 6 rib rack of lamb
  • Spice crust
  • 1/2 tsp. (2 mL) Irresistibles* cumin
  • 1/2 tsp. (2 mL) Irresistibles*curry
  • 1/4 tsp. (1 mL) Irresistibles* coriander ground
  • 1/2 tsp. (2 mL) orange zest
  • 2 tsp. (10 mL) canola oil*

Preparation

  1. Trim the rack of lamb, choose the crust desired, mix all ingredients and spread over the rack. Sprinkle the crust with breading or sesame seeds.
  2. Preheat ovenor BBQ to 375ºF (190ºC), cook for 10 minutes, then lower the heat to 350ºF (180ºC) and cook for 8 to 10 more minutes.

Suggestion: Lamb should be cooked rare or 154ºF (68ºC) on the meat thermometer.
