ingredient
- 2 x 6 rib rack of lamb
- Spice crust
- 1/2 tsp. (2 mL) Irresistibles* cumin
- 1/2 tsp. (2 mL) Irresistibles*curry
- 1/4 tsp. (1 mL) Irresistibles* coriander ground
- 1/2 tsp. (2 mL) orange zest
- 2 tsp. (10 mL) canola oil*
Preparation
- Trim the rack of lamb, choose the crust desired, mix all ingredients and spread over the rack. Sprinkle the crust with breading or sesame seeds.
- Preheat ovenor BBQ to 375ºF (190ºC), cook for 10 minutes, then lower the heat to 350ºF (180ºC) and cook for 8 to 10 more minutes.

Suggestion: Lamb should be cooked rare or 154ºF (68ºC) on the meat thermometer.
