ingredient
- 1 mango, peeled and diced
- 1 red bell pepper, finely chopped
- 125 mL (½ cup) onion, chopped
- Juice of 1 fresh lime
- 15 mL (1 tb sp.) olive oil
- 60 mL (¼ cup) fresh coriander, chopped, plus a few leaves for garnish
- Salt and pepper to taste
- ½ cucumber, thinly sliced
- 24 shrimp, cooked and shelled
Preparation
- Combine mango, pepper, onion, lime juice and coriander in a bowl. Season to taste. Refrigerate for 1 hour. Line each martini glass with cucumber slices.
- Place some mango mixture in bottom of each glass and top with shrimp and fresh coriander leaves. Refrigerate or serve immediately
