Ingredient
- Three or four green onions (white part only) finely chopped
- ½ cup of white wine
- ½ cup of heavy cream
- 200 gr. of Gorgonzola cheese
- A pinch of freshly gratted nutmeg
- Cracked pepper
- Few table spoon of truffle oil...(to taste)
Preparation
- Melt the chopped onions in olive oil and butter. Then add the white wine, the cream and the Gorgonzola cheese crumbled. Season with nutmeg and pepper. Let reduce by half or until the sauce is well thickened and creamy.
- In the meantime cook the fresh pasta. When pasta is cooked, stir into the sauce and add truffle oil to taste over the top to enhance the mushroom flavor of the whole dish. Serve immediately while singning O sole mio
