Halibut Ceviche with Grapefruit

Ingredient

  • 500 g (1 lb) halibut, cubed
  • 1 jalapeño pepper, seeded and chopped
  • 1 red onion, chopped
  • 2 limes, pressed
  • 1 grapefruit, pressed
  • 30 ml (2 tbsp) coriander, chopped
  • 5 ml (1 tsp) sea salt

Preparation

  1. Combine all ingredients in a glass bowl and mix well. Refrigerate mixture for about 2 hours (stirring 3 or 4 times). Serve in cocktail glasses and garnish with grapefruit segments and lime sections.

Serves: 4-6
Chef's Tip: For those who like to spice things up, add a few drops of Tabasco sauce!
