Escargot with Cheese Duo

Ingredient

  • 150 g (5 oz) bloomy rind cheese (Cendré des prés or brie)
  • 150 g (5 oz) fresh goat's cheese
  • 45 ml (3 tbsp) 15% cooking cream
  • 2 egg yolks
  • 1 garlic clove, chopped
  • 2 sprigs fresh tarragon
  • To taste salt and ground pepper
  • 36 shortcrust pastry shells (shaped like small seashells)
  • 36 snails (canned)
