Ingredients

  • 1 bag (284 g) Compliments Harvest Romaine Salad Blend, chopped
  • 2 Compliments Organic Carrots, grated
  • 1 each red pepper and red onion, halved and thinly sliced
  • 2 red chili peppers, halved, seeded and thinly sliced
  • 1 can (284 mL) Compliments Whole Mandarin Orange Segments, drained
  • Salt and pepper
  • 2 pkgs. (340 g each) Compliments Spicy Lemongrass Jumbo Shrimp
  • 1 tbsp (15 mL) Compliments Extra Virgin Olive Oil
  • ½ cup (125 mL) Compliments Sensations Mandarin Ginger Vinaigrette

Preparation

  1. Combine lettuce with the carrot, peppers, onions, chilies and mandarin segments. Season lightly with salt and pepper.
  2. Heat oil in a large skillet set over medium-high heat. Stir-fry shrimp for 7 to 10 minutes or until opaque. Toss slaw with the vinaigrette and serve topped with the shrimp.
