Ingredients
- 1 bag (284 g) Compliments Harvest Romaine Salad Blend, chopped
- 2 Compliments Organic Carrots, grated
- 1 each red pepper and red onion, halved and thinly sliced
- 2 red chili peppers, halved, seeded and thinly sliced
- 1 can (284 mL) Compliments Whole Mandarin Orange Segments, drained
- Salt and pepper
- 2 pkgs. (340 g each) Compliments Spicy Lemongrass Jumbo Shrimp
- 1 tbsp (15 mL) Compliments Extra Virgin Olive Oil
- ½ cup (125 mL) Compliments Sensations Mandarin Ginger Vinaigrette
Preparation
- Combine lettuce with the carrot, peppers, onions, chilies and mandarin segments. Season lightly with salt and pepper.
- Heat oil in a large skillet set over medium-high heat. Stir-fry shrimp for 7 to 10 minutes or until opaque. Toss slaw with the vinaigrette and serve topped with the shrimp.
