Ingredients
- 125 g Compliments Maple Bacon, chopped
- 10 mL Compliments Pure Olive Oil
- 1 bag (340g) baby carrots
- 125 mL sliced red onion
- 2 sprigs fresh rosemary
- 30 mL Compliments Pure Maple Syrup
- 1 mL each salt and pepper
Preparation
- In a medium skillet over medium high heat sauté bacon until crispy. Remove bacon to paper lined plate; set aside. Discard excess fat.
- Wipe pan clean. Return pan to heat and reduce heat to medium. Add olive oil and sauté carrots with red onion until tender - about 15 minutes. Strip leaves of one rosemary sprig onto carrots and add maple syrup. Add salt and pepper and toss.
- Transfer to platter and drizzle over maple syrup pan juices. Sprinkle with crispy bacon and garnish with rosemary sprig.
