Cheese Muffins

Ingredients

  • 160 ml all-purpose flour
  • 125 ml whole-wheat flour
  • 10 ml baking powder
  • 1 ml salt
  • 250 ml grated marbled cheddar cheese
  • 2 eggs
  • 125 ml milk
  • 15 ml vegetable oil
  • 1 green onion, chopped
  • 1/2 onion, chopped
  • 1 ml salt
  • 2 ml pepper
  • 5 ml dry mustard

Preparation

  1. Preheat oven to 350 °F (180 °C). Grease muffin tins. Combine first four ingredients in a big bowl and mix well. Stir in grated cheese. In another big bowl, beat in eggs and whisk in seven last ingredients. Pour over dry ingredients. Stir until just moistened. Spoon into prepared muffin tins. Bake for 15 to 20 minutes. Serve warm.
