Ingredients
- 30 ml (2 tablespoons) olive oil
- 1 onion, chopped
- 2 carrots, diced
- 10 ml (2 Teaspoon) chopped garlic
- 2 celery stalks, diced
- 3 potatoes, diced
- 1 leek, sliced
- 125 ml (1 / 2 cup) pearl barley
- 1 can diced tomatoes 796 ml
- 1.5 liters (6 cups vegetable broth
- 1 to 2 pinches of nutmeg
- 1 bay leaf
- salt and pepper to taste
preparation
- In a skillet, heat the oil over medium. Brown, onion with carrots and garlic. Place all ingredients in crock pot. Mix and cover. Let cook on low for eight to ten hours or on high four to five hours.
