Ingredients
- 1 rack of lamb, 6 loin ribs
- 2 Tbsp. (30 mL) Irresistibles Dijon mustard*
- 3 Tbsp. (45 mL) chopped parsley
- 2 cloves garlic, chopped
- 3 Tbsp. (45 mL) fine fresh breadcrumbs
- 1 Tbsp. (15 mL) melted butter*
- 2/3 cup (150 mL) beef consommé*
preparation
- Brush the rack of lamb with mustard. Mix breadcrumbs with parsley and garlic; coat the meat with this mixture and put in a roasting pan. Sprinkle with melted butter.
- Preheat the oven to 350ºF (180ºC). Roast 45 minutes to 1 hour, or until cooked to taste. Transfer rack of lamb to a serving platter and keep hot. Pour the beef consommé into roasting pan: over high heat, deglaze with a few minutes.
