Ingredients
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 cup butter or marg
- 1 cup sugar
- 1 cup canned pumpkin
- 1 egg
- 1 tsp vanilla
Frosting
- 4 Tbsp milk
- 3 Tbsp butter
- 1/2 cup brown sugar
- 1 cup confectioners sugar
- 3/4 tsp vanilla
Preparation
- Preheat oven to 350°. Cream together butter and sugar. Add pumpkin, egg and vanilla and beat well. Stir together flour, baking soda, baking powder, cinnamon and salt. Add dry ingredients all at once.
- Stir gently to form a smooth batter. Drop by teaspoonfuls onto greased baking sheets. Bake at 350° for 10 to 12 minutes. Remove and cool. Spread with frosting if desired
Frosting
- Combine in a pan the butter, milk and brown sugar. Heat to boiling and boil for 2 minutes, stirring constantly. Remove from heat and let cool. Stir in confectioners sugar and vanilla. Spread on cooled cookies.
