Ingredients
- 4 À la carte trout fillets flavour cranberry
- 1 Tbsp. (15 mL) Butter
- 1 French shallot
- 1/2 Tbsp. (7 mL) Flour
- 1/2 cup (125 mL) White wine
- 1 1/2 cups (125 mL) Chicken broth
- 1/4 cup (60 mL) Fresh cranberries
- To taste nordic shrimp
- 1/4 cup (60 mL) 35% cream
- To taste sea salt
Preparation
- Preheat oven to 350°F (180°C). Place fillets on a baking sheet or in an ovenproof dish and bake for 8 to 10 minutes.
- In a frying pan over medium heat, melt butter and cook shallot until soft.
- Stir in flour then deglaze with white wine. Add bouillon, cranberries, cook over medium heat for 5 to 6 minutes, until thickened. Add shrimp.
- Add cream and stir. Salt and pepper to taste.
- Spoon sauce over fillets.
