Muffins aux zucchinis et carottes

Ingrédients

  • 2 tasses de carottes râpées
  • 1 tasse de zucchinis râpés
  • 1 tasse de pommes râpées
  • 3/4 tasse de noix de coco
  • 1/2 tasse d'amandes en morceaux
  • 2 c. à thé de zeste d'orange
  • 2 tasses de farine
  • 1-1/4 tasse de sucre
  • 1 c. à table de canelle
  • 2 c. à thé de bicarbonate de soude
  • 1/2 c. à thé de sel
  • 3 oeufs légèrement battus
  • 3/4 tasse d'huile
  • 1 c. à thé de vanille

Préparation

  1. Mélanger les 6 premiers ingrédients. Dans un grand bol combiner les ingrédients secs. Mélanger ensemble les oeufs, l'huile et la vanille.
  2. Ajouter au mélange sec et humecter seulement. Ajouter le mélange de fruits et légumes. Cuire au four à 375 F environ 20-22 minutes
