Ingredients
- 2/3 cup (150 mL) lime juice
- 2 tbsp (30 mL) granulated sugar
- 2 tsp (10 mL) unflavoured gelatin
- 1 tbsp (15 mL) grated lime rind
- Green food colouring
- 1 can (300 mL) low-fat sweetened condensed milk
- 1 cup (250 mL) whipping cream
- 1 lime, thinly sliced
Preparation
- In saucepan, combine lime juice with sugar; sprinkle with gelatin. Let soften for 1 minute; heat over medium heat, stirring, for 3 minutes or until dissolved. Stir in lime rind and enough drops of food colouring to tint bright green (colour will soften when cream is added).
- Let cool to room temperature. Whisk in milk; cover and refrigerate for 15 minutes or until slightly thickened. Whip cream; fold into lime mixture. Spoon into parfait glasses; cover and refrigerate for at least 1 hour or until set or for up to 24 hours. Garnish with lime slices
