Ingredients
- 6 cups (1.4L) baby salad greens
- 1/4 red onion, thinly sliced
- Orange Vinaigrette (recipe follows)
- 1/4 cup (59 mL) crumbled blue cheese
- 1/4 cup (59 mL) toasted pecans
Orange Vinaigrette
- 1 jar (310mL) Smucker's ® No Sugar Added Orange Spread
- 1/4 cup (59 mL) balsamic vinegar
- 1/4 cup (59 mL) Dijon mustard
- 3/4 tsp (3.7 mL) freshly ground pepper
- 1/2 cup (118 mL) olive oil
- 1/2 to 3/4 cup (118-177 mL) water
Preparation
- Combine greens, onions and desired amount of vinaigrette in medium sized bowl. Arrange on serving platter and garnish with blue cheese and pecans. Serve immediately.
Orange Vinaigrette
- Orange Vinaigrette: Combine first 4 ingredients in medium sized bowl. Gradually whisk in olive oil then ½ cup (118mL) water. Continue whisking until smoothly blended. Add additional ¼ cup (50mL) water if a thinner consistency is desired.
