ingredients

  • 1 ¼ cups of pure lard (Tenderflake)
  • ¾ cup sugar
  • 2 eggs
  • 2 tablespoon pure almond extract
  • 2 ½ cups flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoon ground almonds

preparation

  1. In a bowl, cream together pure lard and sugar. Add 1 egg at a time, then, add the almond extract.
  2. In another bowl, sift flour, baking soda, salt and ground almonds. Using an electric mixer, gradually add to the creamy mixture.
  3. Split the mixture in two equal parts. Form the dough into 2 rolls using plastic wrap (Saran Wrap style).
  4. Refrigerate for at least 3 hours before cutting into rolls ¼'' thick each. Bake on a cooking sheet, covered with parchment paper for 10 minutes, at 375F degrees.

Who doesn't like to eat some good almond cookies after a Chinese meal?!? So good with some jasmine tea, a real delight!
I have made the cookies a little smaller than what they serve in restaurants but they are as delicious, if not better?. Simple and easy to make, cookies that everyone will enjoy!
