ingredients
- 1 ¼ cups of pure lard (Tenderflake)
- ¾ cup sugar
- 2 eggs
- 2 tablespoon pure almond extract
- 2 ½ cups flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 tablespoon ground almonds
preparation
- In a bowl, cream together pure lard and sugar. Add 1 egg at a time, then, add the almond extract.
- In another bowl, sift flour, baking soda, salt and ground almonds. Using an electric mixer, gradually add to the creamy mixture.
- Split the mixture in two equal parts. Form the dough into 2 rolls using plastic wrap (Saran Wrap style).
- Refrigerate for at least 3 hours before cutting into rolls ¼'' thick each. Bake on a cooking sheet, covered with parchment paper for 10 minutes, at 375F degrees.

Who doesn't like to eat some good almond cookies after a Chinese meal?!? So good with some jasmine tea, a real delight!
I have made the cookies a little smaller than what they serve in restaurants but they are as delicious, if not better?. Simple and easy to make, cookies that everyone will enjoy!
