Ingredients
- 8 Stoned Wheat Thins Crackers
- 2 plum tomatoes, chopped
- 1 large cucumber, peeled, chopped
- 1 small red pepper, chopped
- 1/2 cup tightly packed, coarsely chopped fresh spinach
- 3 green onions, finely chopped
- 1/4 cup finely chopped fresh mint
- 1/4 cup reduced-calorie Italian dressing
- 1/4 cup fresh lemon juice
Preparation
- Heat broiler.
- Place crackers in single layer on baking sheet. Broil 1 min. or until lightly toasted. Break into small pieces.
- Combine next 6 ingredients in serving bowl.
- Mix dressing and lemon juice. Add to salad; toss to coat. Add crackers; mix lightly. Refrigerate 1 hour.
