Multigrain Bran Muffins

Ingredients

  • 1 cup (250 mL) Nabisco 100% Bran® Cereal
  • 1 cup (250 mL) quick-cooking rolled oats
  • 1/2 cup (125 mL) raisins
  • 1 3/4 cups (425 mL) milk
  • 1/2 cup (125 mL) packed brown sugar
  • 1/3 cup (75 mL) margarine or butter, melted
  • 1 egg
  • 1 Tbsp (15 mL) molasses
  • 1 cup (250 ml) all purpose flour
  • 1/2 cup (125 mL) whole wheat flour
  • 1 tbsp (15 mL) baking powder
  • 1/2 tsp (2 mL) each ground ginger, cinnamon & salt

Preparation

  1. In large bowl, combine cereal, oats, raisins and milk; let stand 5 min. Stir in sugar, margarine, egg and molasses. In large bowl, combine flours, baking powder, ginger, cinnamon and salt. Stir cereal mixture into dry ingredients, stirring just until moistened.
  2. Spoon evenly into 12 large greased or paper-lined muffin cups. Bake in 400°F (200°C) oven 20 to 25 min. or until golden brown and firm to touch. Cool in pan 10 min. Turn out onto rack to cool completely. Store in airtight container.
