Ingredients
- 1 cup (250 mL) Nabisco 100% Bran® Cereal
- 1 cup (250 mL) quick-cooking rolled oats
- 1/2 cup (125 mL) raisins
- 1 3/4 cups (425 mL) milk
- 1/2 cup (125 mL) packed brown sugar
- 1/3 cup (75 mL) margarine or butter, melted
- 1 egg
- 1 Tbsp (15 mL) molasses
- 1 cup (250 ml) all purpose flour
- 1/2 cup (125 mL) whole wheat flour
- 1 tbsp (15 mL) baking powder
- 1/2 tsp (2 mL) each ground ginger, cinnamon & salt
Preparation
- In large bowl, combine cereal, oats, raisins and milk; let stand 5 min. Stir in sugar, margarine, egg and molasses. In large bowl, combine flours, baking powder, ginger, cinnamon and salt. Stir cereal mixture into dry ingredients, stirring just until moistened.
- Spoon evenly into 12 large greased or paper-lined muffin cups. Bake in 400°F (200°C) oven 20 to 25 min. or until golden brown and firm to touch. Cool in pan 10 min. Turn out onto rack to cool completely. Store in airtight container.
