Ingredients
- 2 eggs
- 2 tsp (10 mL) grated orange rind
- 2/3 cup (150 mL) orange juice
- 1/4 cup (50 mL) vegetable oil
- 1 cup (250 mL) Nabisco 100% Bran® Cereal
- 2/3 cup (150 mL) chopped dried apricots
- 1 3/4 cups (425 mL) all purpose flour
- 1/3 cup (75 mL) packed brown sugar
- 2 tsp (10 mL) baking powder
- 1/2 tsp (2 mL) salt
- 3/4 cup (175 mL) Ocean Spray* Whole Berry Cranberry Sauce
Preparation
- In medium bowl, whisk together eggs, orange rind, orange juice and oil. Stir in cereal and apricots; let stand 5 min. In large bowl, mix flour, brown sugar, baking powder and salt. Stir cereal mixture into dry ingredients, stirring just until moistened. Fold in cranberry sauce. (Do not overmix.)
- Spread evenly in 12 large greased or paper-lined muffin cups. Bake in 400°F (200°C) oven 25 to 30 min or until golden brown and firm to touch. Cool in pan 10 min; turn out onto rack to cool completely. Store in airtight container.
