Cranberry Apricot Bran Muffins

Ingredients

  • 2 eggs
  • 2 tsp (10 mL) grated orange rind
  • 2/3 cup (150 mL) orange juice
  • 1/4 cup (50 mL) vegetable oil
  • 1 cup (250 mL) Nabisco 100% Bran® Cereal
  • 2/3 cup (150 mL) chopped dried apricots
  • 1 3/4 cups (425 mL) all purpose flour
  • 1/3 cup (75 mL) packed brown sugar
  • 2 tsp (10 mL) baking powder
  • 1/2 tsp (2 mL) salt
  • 3/4 cup (175 mL) Ocean Spray* Whole Berry Cranberry Sauce

Preparation

  1. In medium bowl, whisk together eggs, orange rind, orange juice and oil. Stir in cereal and apricots; let stand 5 min. In large bowl, mix flour, brown sugar, baking powder and salt. Stir cereal mixture into dry ingredients, stirring just until moistened. Fold in cranberry sauce. (Do not overmix.)
  2. Spread evenly in 12 large greased or paper-lined muffin cups. Bake in 400°F (200°C) oven 25 to 30 min or until golden brown and firm to touch. Cool in pan 10 min; turn out onto rack to cool completely. Store in airtight container.
