Banana Muffins 2

Ingredients

  • 1½ cups FIVE ROSES All Purpose White Flour 375 mL
  • 1 cup FIVE ROSES Whole Wheat Flour 250 mL
  • 1 tbsp baking powder 15 mL
  • 1 tsp cinnamon 5 mL
  • ½ tsp salt 2 mL
  • 1 cup mashed ripe bananas 250 mL
  • 2/3 cup LACTANTIA® Healthy Attitudeä Margarine, melted 150 mL
  • ½ cup milk 125 mL
  • ½ cup packed brown sugar 125 mL
  • 1 egg 1
  • 2 tbsp molasses 30 mL

Preparation

  1. In large bowl, mix flours, baking powder, cinnamon and salt. In another bowl, mix remaining ingredients. Stir into flour mixture just until moistened.
  2. Spoon into large greased or paper-lined muffin tins. Bake at 400°F (200°C) about 20 minutes or until browned and firm to the touch. Cool on rack. Store in airtight container.

Variations: Use this recipe as a base to add ingredients your family enjoys. Add one or more of the following ingredients to the flour mixture: ½ cup (125 mL) chocolate chips, raisins, dried cranberries, chopped nuts.
