Pecan Butter Squares

CRUST

  • 1 1/2 cups (375 mL) all purpose flour
  • 1 cup (250 mL) Alpen® Cereal
  • 1/4 cup (50 mL) sugar
  • 3/4 cup (175 mL) butter, melted

FILLING

  • 3 eggs
  • 2 1/4 cups (550 mL) packed brown sugar
  • 3/4 cup (175 mL) butter, melted
  • 1 Tbsp (15 mL) vinegar
  • 1 1/2 tsp (7 mL) vanilla
  • 1 cup (250 mL) each raisins and pecan halves

CRUST

  1. Combine all crust ingredients. Press evenly into lightly greased 13 x 9in(33 x 23 cm) baking pan. Bake at 350°F (180°C)16-20 minutes.

FILLING

  1. Beat eggs and brown sugar. Beat in butter, vinegar and vanilla. Stir in raisins and pecans.
  2. Pour over crust and bake 25-30 minutes or until just set. Cool. Cut into squares. Store in refrigerator.
