Ingredients
- 1/4 cups (300 mL) water
- 1 cup (250 mL) chopped dates
- 3/4 cup (175 mL) chopped pitted prunes
- 1/2 cup (125 mL) raisins
- 1/2 cup (125 mL) Canola Harvest® Margarine
- 2 eggs
- 1 tsp (5 mL) vanilla
- 1 cup (250 mL) all purpose flour
- 3/4 cup (175 mL) Equal Spoonful®
- 1 tsp (5 mL) baking soda
- 1/2 tsp (2 mL) cinnamon
- 1/4 tsp (1 mL) nutmeg
- 1/4 tsp (1 mL) salt
- 1/4 cup (50 mL) chopped walnuts
Preparation
- In medium saucepan, combine water, dates, prunes and raisins; heat to boiling. Reduce heat and simmer, uncovered, until fruit is tender and water is absorbed, about 10 minutes.
- Remove from heat and add margarine, stirring until melted; cool to room temperature.
- Stir eggs and vanilla into fruit mixture. Combine flour, equal spoonful, baking soda, cinnamon, nutmeg and salt; stir into mixture. Spread evenly in 9in (23 cm) square baking pan sprayed with Canola Harvest® Nonstick Spray; sprinkle with nuts.
- Bake at 350°F (180°C) 30-35 minutes or until cake springs back when lightly touched. Cool on rack. Cut into squares.
