Creamy Rice Pudding

Ingredients

  • 1 can (370 ml) NESTLÉ® CARNATION® Evaporated Milk
  • 1-1/3 cups water 325 ml
  • 1/2 cup long-grain rice 125 ml
  • 2 eggs
  • 1/3 cup granulated sugar 75 ml
  • 1/4 tsp cinnamon 1 ml
  • 1/2 cup raisins 125 ml
  • 1 tsp vanilla 5 ml

Preparation

  1. In heavy saucepan, combine evaporated milk, water and rice; cook, stirring, until boiling. Reduce heat to low; cover and cook for 40 minutes, stirring frequently.
  2. In small bowl, beat together eggs, sugar and cinnamon; stir into hot rice mixture. Stir in raisins (if using). Cook, stirring, for 3 minutes or until thickened. Remove from heat; stir in vanilla. Serve warm or cool.
