Ingredients
- 4 yellow onion, thinly sliced
- 4 tbsp (60 mL) butter
- 1 tsp (5 mL) granulated sugar
- 3 tbsp (45 mL) all-purpose flour
- 4 cups (1 L) beef broth
- 1/4 cup (50 ml) red wine
- Salt and pepper
- 4 slices of French bread, toasted
- 2 cups (500 mL) grated Canadian Emmental cheese
Preparation
- Preheat broiler. In saucepan, sauté onions and sugar in butter over medium heat for about 10 minutes, stirring frequently. Stir in flour and cook for another 3 minutes while stirring. Stir in beef broth and red wine. Season to taste with salt and pepper. Bring to boil, reduce heat, cover and simmer for 20 minutes.
- Fill 4 individual bowls with onion soup. Garnish each serving with toasted bread slices and sprinkle generously with Canadian Emmental cheese. Brown cheese under broiler. Serve immediately.
