Deliciously Different Butters for Veggies

ingredient

  • Lime Cilantro Butter
  • 1/2 cup (125 mL) butter, softened
  • 2 tbsp (30 mL) cilantro, chopped
  • 1/2 tsp (2 mL) lime rind, grated
  • 1 tbsp (15 mL) lime juice
  • 2 tsp (10 mL) sweet red pepper, finely-chopped
  • Maple-Pecan Butter
  • 1/2 cup (125 mL) butter, softened
  • 1/3 cup (75 mL) maple syrup
  • 1/4 cup (50 mL) toasted pecans, chopped
  • Spicy Cheddar Butter
  • 3/4 cup (175 mL) Canadian Cheddar cheese, finely shredded
  • 1/2 cup (125 mL) butter, softened
  • 1 tbsp (15 mL) pickled hot pepper rings, chopped
  • Hot pepper sauce

Preparation

  1. Lime Cilantro Butter: Beat together butter, cilantro, lime rind, lime juice and red pepper. Add salt and pepper to taste. Let stand 1 hour to blend flavours.
  2. Maple-Pecan Butter: Beat together butter, maple syrup and pecans. Add salt and pepper to taste. Let stand 1 hour to blend flavours.
  3. Spicy Cheddar Butter: Beat together Canadian Cheddar cheese, butter and hot peppers. Add hot pepper sauce to taste. Let stand 1 hour to blend flavours.

Makes 3/4 cup (175 mL).
