ingredient
- 4 steaks of ham, a bone-in cut, 6 oz (175 g) each, about 1 1/2 in (1 cm) thick
- 1/2 pumpkin
- 1 yellow pepper
- 2 tbsp (25 mL) butter*
- Salt and pepper, to taste
- 1/4 cup (50 mL) whipping cream (35 %)
- 1/2 tsp (2 mL) nutmeg
- Water or chicken broth, if necessary
- 12 snow peas
- 3 tbsp (45 mL) butter
Preparation
- Place ham slices in a large steamer to steam through over very low heat. Peel and cut pumpkin into pieces and slice yellow pepper.
- In a pan, heat 2 tbsp (25 mL) butter and cook pumpkin and pepper for 4 to 5 minutes. Season with salt and pepper. Add cream and cook for 3 to 4 minutes longer.
- Blend mixture in food processor, add nutmeg and set aside. If sauce is too thick, dilute with a small amount of water or chicken broth. Cut ends off snow peas, string and sauté in 3 tbsp (45 mL) butter for 1 to 2 minutes. Cover bottom of plate with sauce, add ham and garnish with snow peas and some reserved julienned pepper.
