Green and Wax Beans with Nutty Oil

ingredient

  • 1 lb (500 g) green beans, trimmed
  • 1 lb (500 g) wax beans, trimmed
  • 4 tbsp (60 mL) butter
  • 2 tbsp (30 mL) nut oil
  • 1/2 cup (125 mL) coarsely chopped nuts
  • 2 tbsp (30 mL) chopped fresh parsley
  • Salt and pepper

Preparation

  1. Steam, or boil in little water, green and wax beans, until tender-crisp. Drain, if necessary.
  2. In saucepan, sauté beans in nut oil and butter over medium heat for 5 minutes. Season to taste. Stir in nuts and parsley. Serve immediately.
