ingredient
- 8 bacon slices
- 5 lb (2.5 kg) potatoes, peeled and quartered
- 1 cup (250 mL) milk
- 4 tbsp (60 mL) butter
- 3 tbsp (45 mL) chives or green onions
- 2 tbsp (30 mL) parsley
- Salt and pepper
Preparation
- Cook bacon until crisp. Dry on paper towel and chop finely. Set aside.
- Cook potatoes and drain. Mash and stir in butter and milk. Season to taste. Transfer to serving platter and sprinkle with chives (or green onions), bacon and parsley.
