Crispy Rice Cereal Cookies

ingredient

  • 1/2 cup (125 ml) softened butter
  • 1 cup (250 ml) granulated sugar
  • 1 egg, beaten
  • 2 tsp (10 ml) vanilla extract
  • 2/3 cup (150 ml) all-purpose flour
  • 2/3 cup (150 ml) whole wheat flour
  • Pinch of salt
  • 2 1/2 cups (625 ml) roasted rice cereal
  • 2/3 cup (150 ml) chocolate chips
  • 1/2 cup (125 ml) coarsely chopped nuts

Preparation

  1. Preheat oven to 350°F (180°C). In bowl, whip together butter and sugar. Blend in egg and vanilla extract. Mix well. Gradually stir in both flours and salt. Stir in remaining ingredients, stirring gently.
  2. Drop mixture by spoonfuls onto buttered cookie sheet. Bake for 10 to 12 minutes. Repeat with remaining dough. Let cool for a few minutes before serving.
