Citrus Fruit Bread

Ingredient

  • 3 cups (750 mL) all-purpose flour
  • 2 tsp (10 ml) baking powder
  • Pinch of salt
  • 1 cup (250 mL) softened butter
  • 2 cups (500 mL) brown sugar
  • 4 tbsp (60 mL) fresh orange juice
  • 2 tbsp (30 mL) lemon juice
  • 4 eggs, beaten
  • 1 cup (250 mL) milk
  • 2 tbsp (30 mL) grated orange rind
  • Icing sugar

Preparation

  1. Preheat oven to 350 °F (180 °C). Butter and lightly flour a 9 x 5 inch (23 x 13 cm) loaf pan. Set aside. In large bowl, mix together flour, baking powder and salt; set aside. In other bowl, cream butter with brown sugar. Blend in flour mixture.
  2. Beat orange juice, lemon juice, eggs, milk and orange rind into flour mixture with electric mixer. Mix well. Pour into pan and bake for 1 hour or until toothpick inserted in centre comes out clean. Let cool and dust top with icing sugar before serving.
