Ingredient
- 3 cups (750 mL) all-purpose flour
- 2 tsp (10 ml) baking powder
- Pinch of salt
- 1 cup (250 mL) softened butter
- 2 cups (500 mL) brown sugar
- 4 tbsp (60 mL) fresh orange juice
- 2 tbsp (30 mL) lemon juice
- 4 eggs, beaten
- 1 cup (250 mL) milk
- 2 tbsp (30 mL) grated orange rind
- Icing sugar
Preparation
- Preheat oven to 350 °F (180 °C). Butter and lightly flour a 9 x 5 inch (23 x 13 cm) loaf pan. Set aside. In large bowl, mix together flour, baking powder and salt; set aside. In other bowl, cream butter with brown sugar. Blend in flour mixture.
- Beat orange juice, lemon juice, eggs, milk and orange rind into flour mixture with electric mixer. Mix well. Pour into pan and bake for 1 hour or until toothpick inserted in centre comes out clean. Let cool and dust top with icing sugar before serving.
