ingredient
- 1 1/2 cup (375 mL) granulated sugar
- 1 cup (250 mL) softened butter
- 3 eggs, beaten
- 2 tsp (10 mL) vanilla extract
- 3 cups (750 mL) all-purpose flour
- 1 cup (250 mL) strong filter moka coffee
- 2/3 cup (150 mL) cream 15%
- 1 1/2 tsp (7 mL) baking powder
- 1 1/2 tsp (7 mL) salt
Kiwi Sauce
- 1/4 cup (50 mL) water
- 1/4 cup (50 mL) milk
- 4 tbsp (60 mL) granulated sugar
- 6 kiwis, peeled
- 2 tbsp (30 mL) cornstarch, diluted in a little water
Preparation
- Preheat oven to 350 °F (180 °C). In large bowl, mix sugar, butter, eggs and vanilla extract with electric mixer until smooth. Gradually beat in remaining ingredients. Mix well until smooth.
- Pour into buttered tube pan and bake for 1 hour or until toothpick inserted in centre comes out clean. Remove from oven and let cool for 15 minutes before removing cake from pan. Serve on dessert , lightly covered with Kiwi Sauce.
Kiwi Sauce
- In saucepan, boil water, milk, sugar and kiwis for 5 minutes, stirring occasionally. Stir in diluted cornstarch and continue boiling for 1 minute while stirring. Purée in food processor. Strain and set aside.
