Ingredients
- 2 lbs (1 kg) of unpeeled red potatoes
- 1 each other,red,green and yellow pepper, diced
- 2 stalks of celery, diced
- 1/4 cup (50 mL) of spanish onion, diced
- 1 cup (250 mL) of fat free Food Source? whipped dressing
- 1 clove (24 mL) of garlic, minced
- 2 Tbsp (25 mL) of chopped fresh dill (or 2 tsp/10 mL dried)
- 2 Tbsp (25 mL) of balsamic vinegar
- 1 tsp (5 mL) of salt
- 1/2 tsp (2 mL) of black pepper
- 2 Tbsp (25 mL) of sliced green onions
Preparation
- Cook potatoes; cool slightly and cut into big chunks. Mix with peppers, celery and onion. Stir in remaining ingredients, except green onion. Cover and refrigerate. Serve on greenerys and sprinkle with green onions.
