Mushroom Potato Gratin

Ingredients

  • 1 Tbsp (15 mL) vegetable oil
  • 2 1/2 cups (625 mL) sliced fresh mushrooms
  • 1 clove garlic, minced
  • 1 pkg (175 g) Shirriff* Countrystyle* Potatoes with Sour Cream & Chives Sauce Mix
  • 3 cups (750 mL) water
  • 1 fresh plum tomato, thinly sliced
  • 1/2 cup (125 mL) shredded Swiss cheese
  • Chopped fresh parsley
  • Freshly-cracked pepper

Preparation

  1. Heat oil in medium saucepan. Add mushrooms and garlic; cook and stir over medium-high heat until tender and any liquid has evaporated.
  2. Add package of sauce mix, potato slices and water to pan. Cook and stir until mixture boils. Reduce heat, cover and simmer 20 min; stir occasionally.
  3. Spoon potato mixture into 6-cup (1.5 L) shallow baking dish. Arrange tomato slice on top of potatoes; sprinkle cheese over all. Broil until cheese melts and bubbles. Sprinkle with parsley and pepper. Let stand 10 min before serving.
