Ingredients
- 1 Tbsp (15 mL) vegetable oil
- 2 1/2 cups (625 mL) sliced fresh mushrooms
- 1 clove garlic, minced
- 1 pkg (175 g) Shirriff* Countrystyle* Potatoes with Sour Cream & Chives Sauce Mix
- 3 cups (750 mL) water
- 1 fresh plum tomato, thinly sliced
- 1/2 cup (125 mL) shredded Swiss cheese
- Chopped fresh parsley
- Freshly-cracked pepper
Preparation
- Heat oil in medium saucepan. Add mushrooms and garlic; cook and stir over medium-high heat until tender and any liquid has evaporated.
- Add package of sauce mix, potato slices and water to pan. Cook and stir until mixture boils. Reduce heat, cover and simmer 20 min; stir occasionally.
- Spoon potato mixture into 6-cup (1.5 L) shallow baking dish. Arrange tomato slice on top of potatoes; sprinkle cheese over all. Broil until cheese melts and bubbles. Sprinkle with parsley and pepper. Let stand 10 min before serving.
