Ingredients
- 1 1/2 cups (375 mL) Kraft Minute* Rice
- 3 cups (750 mL) broccoli spears, cooked and drained
- 2 cups (500 mL) cubed cooked chicken or turkey
- 1 can (10 oz/284 mL) Campbell'S® Condensed Cream of Broccoli or Half Fat Cream of Broccoli Soup
- 1 3/4 (425 mL) cups hot water
- 1/2 tsp (2 mL) dried thyme (optional)
- 1/2 cup (125 mL) shredded cheddar cheese
- 3 Tbsp (45 mL) fine dry bread crumbs
- 1 Tbsp (15 mL) butter or margarine, melted
Cook commentary
Serves 4.
Hints: If leftover cooked chicken or turkey is not available, substitute 12 oz/375 g boneless skinless chicken breasts, cut in cubes. Saute in small amount of vegetable oil about 5 minutes or until no longer pink inside.
For convenience, cook broccoli in microwave oven in covered dish on High 2 - 2 1/2 minutes. Easy complete oven meal; just add a salad. Great recipe for left over holiday turkey.
