Ingredients
- 4 salmon tournedos stuffed with spinach and cheese
- Juice of 1 lime
- Pepper, to taste
Blueberry Salsa
- 45 mL (3 tablespoons) fresh coriander leaves, chopped
- 1 jalapeño pepper, finely chopped
- 10 mL (2 teaspoons) honey
- 1 orange, peeled and diced
- 250 mL (1 cup) blueberries
- 45 mL (3 tablespoons) red onion, finely chopped
- 45 mL (3 tablespoons) lime juice
- Salt and pepper, to taste
Preparation
- Preheat the barbecue medium-high. Place the salmon tournedos on the grill. Sprinkle with lime juice and season with pepper, to taste.
- Cook the salmon tournedos for 5 to 6 minutes per centimetre of thickness (10 to 12 minutes per inch). Place each salmon steak on a bed of rice and serve with
