Pesto-Grilled Tomatoes

ingredient

  • 4 large tomatoes, halved and cored
  • 30 ml (2 tbsp.) Olive Oil
  • 60 ml (1/4 cup) Pesto
  • 5 ml (1 tsp.) sugar
  • 30 g (1 oz) freshly grated parmesan cheese (approx. 1/4 cup)
  • 30 ml (2 tbsp.) bread crumbs
  • Pepper to taste

Preparation

  1. Carefully remove the tomato seeds with a small spoon without tearing the flesh.
  2. In an oven-safe pan, warm olive oil over medium-high heat. Place tomatoes in pan flesh side down. Cook 5 minutes without disturbing. Turn and cook 5 minutes on opposite side. Remove from heat.
  3. Brush tomatoes with pesto. Add equal parts sugar, parmesan, and bread crumbs. Season with pepper to taste. Grill for 5 minutes or until tops are golden brown. Serve immediately with IGA brochettes and linguine
