ingredients
- 16 cups of small cucumbers cut in ¼'' slices
- 1 cup of pickling salt (to soak cucumbers in water for 24 hours)
Ingredients (for each jar)
- 2 garlic cloves
- 1 fresh dill sprig
- 1 tablespoon white sugar
- 1/2 teaspoon powdered alum (i.e. from Club House-maintains crispness in pickling recipes)
- 1/2 cup white vinegar
Preparation
- Place sliced cucumbers in a big bowl and add 1 cup of salt (1 layer of cucumber, 1 layer of salt, etc.) Put a clean cloth on top and leave for the whole night to rest.
- After 24 hours, transfer into a strainer and rince with very cold water. Drain properly and dry the cucumbers as much as possible using another clean cloth.
Preparation: (for each jar)
- Bring a good amount of water to boil, 10 minutes. In each jar, add garlic, sugar, alum, vinegar, dill and cucumbers. Add some boiling water, fill to the edge and seal them with lids.
Cook commentary
Quantity : Gives 8 x 500ml jars. Make sure you sterilize your jars and lids before filing them with dill pickles.
