Ingredients
- 1 cup flour
- 2 teaspoon baking powder
- 1 pinch salt
- 1/4 cup soft butter
- 1 teaspoon vanilla
- 1 cup brown sugar
- 2 eggs
- 1/2 cup milk
- Mini marshmallows
Icing
- 1/2 cup butter
- 1/4 cup milk
- 1 cup brown sugar
- 1 1/2 cups icing sugar
- 1/2 teaspoon salt
- 1/4 teaspoon vanilla
Preparation
- Mix together eggs, brown sugar and butter using an electric mixer. Once well mixed, add milk and vanilla.
- In a separate bowl, mix the dry ingredients together: flour, baking powder and salt. Add the mix to the first one and whip all together. Spread mixture into a greased 13x9 cake pan. Cook at 350F degrees for 20 to 25 minutes.
- As soon as you remove the cake from the oven, spread some mini marshmallows over the cake until it's all covered. Put back into the oven for 4 to 5 minutes.

- Put butter, milk and brown sugar into a small saucepan. Simmer on low heat for about 3 minutes (don't bring to boil). Remove from heat and allow to cool down for about 30 minutes.
- With an electric mixer, at low speed, add all the other ingredients until the batter is smooth. It will be a bit liquid, but of a nice consistency. Spread on the cooled cake. Serve.
