Chocolate Coffee Chews

Ingredients

  • 3/4 cup (175mL) CHIPITS® Semi-Sweet Chocolate Baking Chips
  • 1/2 cup (125mL) CHIPITS® MINI KISSES®
  • 1/2 cup (125mL) butter
  • 2 eggs
  • 3/4 cup (175mL) granulated sugar
  • 2-3 tsp (10-15mL) instant coffee powder
  • 2 tsp (10mL) vanilla
  • 2/3 cup (150mL) all purpose flour
  • 1/2 tsp (2mL) baking powder
  • 1-1/2 cups (300mL) CHIPITS® MINI KISSES®
  • 1-1/4 cups (300mL) chopped pecans

Directions

  1. MELT first three ingredients in small saucepan, stirring until smooth. Cool slightly, about 15 minutes.
  2. BEAT eggs and sugar on high speed of electric mixer until well blended.
  3. STIR in chocolate mixture, coffee and vanilla. Stir in flour and baking powder. Mix well. Stir in 1 1/2 cups (375 mL) KISSES® and pecans.
  4. DROP dough by tablespoons onto parchment lined baking sheets.
  5. BAKE at 350°F (180°C) for 10 to 15 minutes or until top cracks but cookies are still moist inside. Cool 10 minutes, then transfer cookies to racks; cool completely.
