Ingredients
- 12 baby or small new potatoes
- 750 ml (3 cups) sweet potatoes, diced
- 8 radishes, sliced
- 8 green onions, chopped
- 60 ml (¼ cup) fresh coriander, chopped
Dressing
- 125 g (4 oz) cream cheese, at room temperature
- 1 clove garlic, chopped
- 60 ml (¼ cup) plain yogurt
- 10 ml (2 tsp) lemon juice
- 60 ml (¼ cup) milk
- 15 ml (1 tbsp) vegetable oil
- 60 ml (¼ cup) parsley, chopped
- 5 ml (1 tsp) cumin
Directions
- Cook potato varieties separately. Drain thoroughly and cool. Combine ingredients in a large salad bowl. Add dressing to taste
Dressing
- Combine dressing ingredients and set aside.
