Ingredient

  • 2 L (8 cups) assorted greens: romaine, watercress, arugula, radicchio, red leaf lettuce or chicory

Dressing

  • 30 ml (2 tbsp) olive oil
  • 30 ml (2 tbsp) balsamic vinegar
  • 2 leaves fresh basil, finely chopped
  • 30 ml (2 tbsp) walnut halves
  • 60 ml (1/4 cup) shaved Parmesan cheese (use a vegetable peeler)
  • To taste salt and freshly ground pepper

Directions

  1. Place the greens in a large bowl and add the dressing.
  2. Divide among the salad bowls, top with Parmesan and walnuts, and season to taste

Dressing

  1. Mix the oil, vinegar and basil in a bowl.
