Ingredient
- 2 L (8 cups) assorted greens: romaine, watercress, arugula, radicchio, red leaf lettuce or chicory
Dressing
- 30 ml (2 tbsp) olive oil
- 30 ml (2 tbsp) balsamic vinegar
- 2 leaves fresh basil, finely chopped
- 30 ml (2 tbsp) walnut halves
- 60 ml (1/4 cup) shaved Parmesan cheese (use a vegetable peeler)
- To taste salt and freshly ground pepper
Directions
- Place the greens in a large bowl and add the dressing.
- Divide among the salad bowls, top with Parmesan and walnuts, and season to taste
Dressing
- Mix the oil, vinegar and basil in a bowl.
