Ingredients
- 250 g (1/2 lb) white shrimp, shelled
- 60 ml (1/4 cup) green onions, chopped
- 1 egg white
- 30 ml (2 tbsp) coriander, finely chopped
- 10 ml (2 tsp) soy sauce
- 5 ml (1 tsp) fresh ginger, chopped
- 5 ml (1 tsp) roasted sesame oil
- In sufficient quantity cornstarch
- 1 package wonton dough (Chinese ravioli), defrosted
- 1.5 L (6 cups) chicken broth, kept hot in a large saucepan
Directions
- Place shrimp in food processor and grind until finely ground or chop finely with a knife. In a bowl, combine shrimp, green onions, egg white, coriander, soy sauce, ginger and sesame oil. Mix well. Lightly dust baking sheet with cornstarch.
- Unwrap wonton dough package, but keep covered with a damp dishcloth to retain freshness. Place 5 ml (1 tsp) of shrimp stuffing in the middle of each wonton square..
- Brush the wonton wrap edges with water and fold over diagonally to form a triangle. Press sides firmly to seal and keep stuffing from leaking, then transfer to the baking sheet. Repeat process as often as required.
- Cook wonton in boiling salted water for 3 minutes. Transfer to the cooking pot filled with hot chicken broth and let simmer gently for 2 minutes. Serve.
