Ingredients
- 375 ml (1½ cup) papaya, diced
- 15 ml (1 tbsp) freshly squeezed orange juice
- 125 ml (½ cup) cream 35% m.f.
- 60 ml (¼ cup) super-fine sugar
- 180 ml (¾ cup) vanilla-flavoured yogurt
- 15 ml (1 tbsp) orange zest, grated
- 375 ml (1½ cup) PC Blue Menu Crunchy Oat cookies, crumbled
Directions
- In a blender, purée 250 ml (1 cup) of diced papaya with orange juice. Set aside. In a bowl, beat cream with sugar. With a spatula, gently fold in yogurt and orange zest.
- Divide half of yogurt mixture between 4 dessert cups. Sprinkle with half of cookie crumbs. Divide papaya purée and remaining diced papaya between the 4 cups on top of the cookie crumbs. Top with the second half of yogurt mixture. Garnish with remaining cookie crumbs.
- Keep in refrigerator until ready to serve. If desired, decorate with a cookie.
