Ingredient
- 125 ml (1/2 cup) butter, room temperature
- 250 ml (1 cup) granulated sugar
- 3 eggs
- 10 ml (2 tsp) vanilla extract
- 625 ml (2½ cups) all-purpose flour
- 20 ml (4 tsp) baking powder
- 1 pinch salt
- 1 lemon, zest and juice
- 1 lime, zest and juice
- 1 orange, zest and juice
- 250 ml (1 cup) walnuts, chopped
Directions
- Preheat oven to 180°C (350°F). Butter and flour a baking sheet. In a big bowl, bring butter to cream. Add sugar then eggs, one at a time. Add vanilla.
- In a second bowl, sift flour, baking powder and salt. Add nuts and citrus zests, mix well. Add dry ingredients to the egg and sugar preparation alternating with the citrus juices.
- Place the resulting dough on the baking sheet. Cook for 20 minutes or until a toothpick inserted in the middle of the cake comes out clean.
