Nuts and Citrus Cake

Ingredient

  • 125 ml (1/2 cup) butter, room temperature
  • 250 ml (1 cup) granulated sugar
  • 3 eggs
  • 10 ml (2 tsp) vanilla extract
  • 625 ml (2½ cups) all-purpose flour
  • 20 ml (4 tsp) baking powder
  • 1 pinch salt
  • 1 lemon, zest and juice
  • 1 lime, zest and juice
  • 1 orange, zest and juice
  • 250 ml (1 cup) walnuts, chopped

Directions

  1. Preheat oven to 180°C (350°F). Butter and flour a baking sheet. In a big bowl, bring butter to cream. Add sugar then eggs, one at a time. Add vanilla.
  2. In a second bowl, sift flour, baking powder and salt. Add nuts and citrus zests, mix well. Add dry ingredients to the egg and sugar preparation alternating with the citrus juices.
  3. Place the resulting dough on the baking sheet. Cook for 20 minutes or until a toothpick inserted in the middle of the cake comes out clean.
