Ingredients
- 4 egg yolks
- 250 ml (1 cup) maple syrup
- 60 ml (1/4 cup) white wine or Sortilège (maple syrup liquor)
- 80 ml (1/3 cup) whipping cream
- 2 oranges, cut into sections
- 1 pink grapefruit, cut into sections
- 2 Blood oranges, cut into sections
- 2 limes, cut into sections
Directions
- Preheat oven to broil. Combine egg yolks, maple syrup and white wine in a bowl. Place the bowl in the upper part of the bain-marie, heat over low heat and beat mixture until a smooth, rich and frothy texture is obtained. Set aside.
- Whip cream and add to egg yolk mixture. Set aside. Fan out citrus sections into four ramequins. Divide frothy texture over all four fruit filled ramequins.
- Broil in the oven until frothy mixture turns golden.

Chef's Tip: Avoid boiling the water in the bain-marie to keep egg yolks from congealing.
