Berry, Coconut and Basil Salad

Ingredients

  • 1 litre (4 cups) mixed berries (strawberries, raspberries, blueberries, blackberries)
  • 45 ml (3 tbsp) brown sugar
  • 30 ml (2 tbsp) dark rum
  • 30 ml (2 tbsp) fresh basil, chopped
  • 60 ml (1/4 cup) orange juice, freshly squeezed
  • 45 ml (3 tbsp) grated coconut
  • For garnish mint leaves

Directions

  1. Wash berries well and drain. Remove strawberry stems and slice in half. Place fruits in a large bowl, add brown sugar, rum, chopped basil and orange juice. Gently toss making sure not to crush fruit. Let stand at room temperature for about 20 minutes.
  2. Meanwhile, spread grated coconut over a baking sheet and broil a few minutes, making sure not to burn coconut. Remove from oven and let cool.
  3. Serve salad in pretty decorative bowls, sprinkle with broiled coconut and garnish with mint leaves. Enjoy with gourmet cookies.
