Ingredients
- 1 litre (4 cups) mixed berries (strawberries, raspberries, blueberries, blackberries)
- 45 ml (3 tbsp) brown sugar
- 30 ml (2 tbsp) dark rum
- 30 ml (2 tbsp) fresh basil, chopped
- 60 ml (1/4 cup) orange juice, freshly squeezed
- 45 ml (3 tbsp) grated coconut
- For garnish mint leaves
Directions
- Wash berries well and drain. Remove strawberry stems and slice in half. Place fruits in a large bowl, add brown sugar, rum, chopped basil and orange juice. Gently toss making sure not to crush fruit. Let stand at room temperature for about 20 minutes.
- Meanwhile, spread grated coconut over a baking sheet and broil a few minutes, making sure not to burn coconut. Remove from oven and let cool.
- Serve salad in pretty decorative bowls, sprinkle with broiled coconut and garnish with mint leaves. Enjoy with gourmet cookies.
