Ingredients
- 450 g (1 lb) Nordic shrimp
- 1 grapefruit, cut into segments
- 1 ripe yet firm avocado, diced
- 90 ml (6 tbsp) mayonnaise
- 1 sprig fresh oregano, chopped
- 30 ml (2 tbsp) citrus juice, your choice
Directions
- Gently mix together shrimp, segments of one grapefruit, diced avocado and mayonnaise. Add chopped onion, citrus fruit juice and toss to blend.
- Sprinkle with chopped oregano and serve with lettuce or in a half grapefruit.
