Ingredients: Salad
- 500 g (1 lb) Matane shrimp, cooked
- 2 large papaya, thinly sliced
- 1 red bell pepper, cut into thin strips
- 2 carrots, grated
- 1 l (4 cups) spring greens
- 60 ml (¼ cup) green onions, minced
- 30 ml (2 tbsp) fresh mint, chopped
- 125 ml (½ cup) peanuts, roasted and coarsely chopped
Dressing
- 60 ml (¼ cup) vegetable oil
- 1 lime, zest and juice
- 15 ml (1 tbsp) soy sauce
- 10 ml (2 tsp) sugar
- 1 ml (¼ tsp) Tabasco sauce
- 1 ml (¼ tsp) salt
- 1 ml (¼ tsp) pepper
Directions: Salad
- Beat together oil, lime zest and juice, soy sauce, sugar, Tabasco sauce, salt and pepper in a bowl.
- In a salad bowl, combine shrimp, papaya, red pepper, carrots, spring greens, green onions and fresh chopped mint.
- When serving, pour dressing over salad and toss gently to coat. Sprinkle each serving with roasted peanuts.
